The present invention relates to a crab shell removal apparatus facilitating gill removal. According to the present invention, a gill is quickly and conveniently removed by high-pressure water injection being performed on a belly shell- and back shell-removed crab, and thus reduction in manual labor for gill removal, chance of misoperation, and crab meat loss during operation can be achieved. The present invention includes: a transporting unit transporting a crab with its back shell facing a bottom; a shell removing unit removing the back shell of the crab transported by the transporting unit; and injection units positioned on both rear sides of the shell removing unit and removing the gill of the back shell-removed and exposed crab by high-pressure water injection. The present invention also includes a shield plate for injection unit separation to prevent the high-pressure water injected from both sides by the injection units from interfering with each other. The shield plate has an upper plate and a lower plate. The upper plate is disposed in a region open in a longitudinal direction in a central portion of the transporting unit and is placed on a horizontal plane in a longitudinal direction. The lower plate is vertically placed on a lower side along a center line of the upper plate in a longitudinal direction.
