The present disclosure relates to hydrolysis of mannan-containing poly- or oligo-saccharides by use of a polypeptide having endo-&bgr;-mannanase activity. In particular the present disclosure relates to compositions comprising a bacterial endo-&bgr;-mannanase, polynucleotides encoding the endo-&bgr;-mannanase, and methods of use thereof.
