<P>PROBLEM TO BE SOLVED: To provide a method for easily and simply producing an oil, which is scarcely oxidized and in which the fish smell is reduced, from shark liver. <P>SOLUTION: An oil is dripped by heating the shark liver in a gas phase at 65 to 70°C. The dripped oil is captured in a saline solution or in a glycerol solution, and the oil is separated from the saline solution or the glycerol solution. Subsequently, the oil is brought sufficiently into contact with a desiccant of an inorganic salt composed of a strong acid and a strong base to remove moisture in the oil, and the desiccant is separated.
