PROBLEM TO BE SOLVED: To develop and provide a method for manufacturing a soup stock made from kelp for impregnating taste of bonitos and shiitake mushroom and providing soup in short time.SOLUTION: There is constituted a method for manufacturing a soup stock made from kelp consisting of a pretreatment step (1) for washing a kelp with an appropriate amount with acetic acid with appropriate amount% and wash water with a salt content with appropriate amount% for washing, a first drying step (2) for drying the kelp cut with a predetermined shape to moisture content of 25 to 35%, a puffing step (3) for puffing the dried kelp by instant decompression means after heating and compressing, a seasoning step (4) for impregnating the puffed kelp into a seasoning by concentrated extract of bonitos and shiitake mushroom and a second drying step (5) for drying the seasoned and puffed kelp in the seasoning step and producing the soup stock made from kelp to which taste of bonitos and shiitake mushroom is impregnated by combination of these steps.SELECTED DRAWING: Figure 1 |
