<P>PROBLEM TO BE SOLVED: To provide a low-cost dispersing agent which, for use in protein-containing foods and beverages, is capable of preventing or suppressing coagulation, precipitation and phase separation of protein particles without diminishing the food texture or resulting in coloration, or unusual tastes or smells in the food or beverage and to provide a protein-containing food or beverage using the same. <P>SOLUTION: This dispersing agent for protein-containing foods and beverages comprises protein which is dispersed in a protein-containing food or beverage, and is characterized by containing an oxidized starch having a carboxyl group content in the range of 0.4-1.3 mass%.
