摘要 |
PURPOSE: A producing method of wash using enzyme agent to improve liquor quality by resolving and removing fat from raw materials of the liquor is provided. CONSTITUTION: The wash using enzyme agent to improve liquor quality is produced by the steps of: (i) washing rice; (ii) soaking 10kg of the cleaned rice in water where 10g of lipoxidase as the enzyme agent is added to at a rate of 10-20u/ml and draining off the water for 2hr; (ii) sucrose-enriching to gelatinate starch of rice by steaming; (iii) getting artificially cultured yeast(ipkuk) by inoculating yeast and culturing; (iv) getting the wash by brewing the cultured yeast in water and fermenting at 25°C for 2days; and then (v) brewing again by adding 20kg of steamed rice and water to the wash and fermenting at 25°C for 7days.
