PRODUCTION OF MODIFIED FAT-AND-OIL COMPOSITION

PROBLEM TO BE SOLVED: To provide a method for producing a modified fat-and-oil composition having a high glyceride content by one step reaction from a fat-and-oil which is available at a low cost. SOLUTION: A modified fat-and-oil composition having a diglyceride content of >=50 wt.% and a glyceride content of <50 wt.% is produced by treating a fat-and-oil with a lipase having 3-position specificity under the condition of the oil-phase/water-phase volume ratio of 1/20 to 20/1. A modified fat-and-oil having a high diglyceride content is efficiently obtained from fat-and-oil by one step reaction. The conversion efficiency from fat-and-oil to diglyceride is remarkably increased especially by the addition of an emulsifier.
