PROBLEM TO BE SOLVED: To obtain a food additive capable of controlling elasticity and hardness of a protein-containing food without impairing salty taste and obtain a protein- containing food to which the above food additive is added, exhibiting sufficient salty taste and having controlled elasticity and hardness. SOLUTION: This food additive in the present invention features being coated with a coating agent such as oil and fat or sucrose fatty acid ester. |
