PROBLEM TO BE SOLVED: To provide a method for more effectively producing equol than before by fermenting isoflavones in an optimum culture medium condition using the action of an aerobic microorganism.SOLUTION: The method for producing equol by the aerobic microorganism having equol-producing ability includes steps of: (1) culturing the aerobic microorganism in a culture medium containing the isoflavones and polyhydric alcohol for allowing the aerobic microorganism to ferment the equol from the isoflavones; and (2) recovering the equol from the culture medium produced by the aerobic microorganism in the step (1). |
