FATTY ACID COMPOSITION HAVING NOVEL FATTY ACID CONTENTS

Disclosed is a fatty acid composition having different fatty acid contents from those of a conventional one. Specifically disclosed is a fatty acid composition produced by culturing a host transformed with a recombinant vector which carries a nucleic acid comprising a nucleotide sequence encoding a protein having a nucleotide sequence depicted in SEQ ID NO:1 or an amino acid sequence depicted in SEQ ID NO:2 or a mutant of the protein having the equivalent functions. In the fatty acid contents of the fatty acid composition, at least one of the following contents and ratios i) to v) is higher than that in a culture product produced by culturing a host which is not transformed with the recombinant vector: i) the content of oleic acid; ii) the ratio of the content of oleic acid to the content of palmitic acid; iii) the ratio of the total content of stearic acid and oleic acid to the content of palmitic acid; iv) the ratio of the total content of stearic acid and oleic acid to the total content of palmitic acid and palmitoleic acid; and v) the content of an n-6 fatty acid.
