Provided is a method for preparing a mackerel treated with pine needles to remove the fishy smell and offensive odor and the acidification during storage and circulation and to improve taste. The method comprises the steps of salting a mackerel in an antibacterial agent comprising a brine obtained by dissolving salt in purified water, a pine needles extract and an organic acid and firstly drying the salted mackerel; and soaking the mackerel in the mixture solution comprising the brine and a sugar alcohol as a moisturizer and secondly drying the soaked mackerel. Preferably the antibacterial agent comprises 8-15 % brine, 3-5 % of a pine needles extract and 3-5 % of an organic acid; the sugar alcohol comprises 1-3 wt% of at least one selected from the group consisting of sorbitol, maltitol and hydrogenated starch syrup; and the organic acid is at least one selected from the group consisting of acetic acid, citric acid, tartaric acid and benzoic acid. |
