PROBLEM TO BE SOLVED: To provide an oil-and-fat composition that produces less change in color phase with age, and contains 35 to 70 mass% of plant-derived monoglyceride having good flavor, and to provide an effective method for producing the same, and a food additive.SOLUTION: [1] An oil-and-fat composition contains plant-derived monoglyceride, wherein, based on the total amount of the composition, the glycerin content is 1.5 mass%; the ascorbic acid content is 300 to 2,000 mass ppm; the tocopherol content is 100 to 1,000 mass ppm, and the citric acid content is 100 to 1,000 mass ppm. [2] A method for producing [1] the oil-and-fat composition includes: a step (I) for subjecting vegetable oil and fat and glycerin to ester exchange reaction in the presence of catalyst; a step (II) for distilling products obtained in the ester exchange reaction to reduce the glycerin content to 1.5 mass% or less based on the total amount of the composition; and a step (III) for adding ascorbic acid, tocopherol, and citric acid.
