FIELD: food industry. ^ SUBSTANCE: invention is related to food industry, namely to devices for cutting butchers. Knife of the device for cutting the rectum of butchers has a hollow cylindrical blade sharpened on the cutting edge. The sharpened blade has the first angle a on short part of length (A) and the send angle that follows it axially and whose value is less than the value of angle . Angle has value between 18 and 22. Axial length of part A is 1.5 mm. Angle has a value of 27. The blade thickness is 3 mm. The external diametre of the hollow cylindrical blade is 60 mm and the internal diametre is 54 mm. ^ EFFECT: invention enables to increase quality of cutting butcher. ^ 7 cl, 4 dwg |
