The device for forming a dough strip (14) from dough mass (2), comprises a container to the reception of the dough mass, a base conveyor strip, which forms the bottom of the container, two side conveyor belts, which form the lower areas of two side walls of the container, exit side vertical conveyor belt that partially forms at both side walls, which are opposite with one another, a gap (6) formed between the base conveyor belt and the vertical conveyor belt for releasing the dough strip, and a cutting device (7) arranged at the gap for detaching or peeling of the dough strip. The side conveyor belts with its conveyor device are arranged parallel to the conveyor device of the base conveyor belt, and/or the cutting device is arranged for the realization of non-contact cutting of the dough strip. The base conveyor belt and the side conveyor belt are driven for transporting the dough mass towards the vertical conveyor belt. The vertically adjustable vertical conveyor belt is driven in such a manner that the mass is transported away towards the vertical belt. The base conveyor belt is arranged around a revolvable turning-/articulation point, which is adapted beneath the gap. An axis of the turning point is arranged parallel to the lower end of the vertical conveyor belt. An adjustment device (11) is arranged around the turning point at the base conveyor belt for the rotation of the base conveyor belt and consists of a hydraulically operated swing cylinder. The adjustment device is controlled by measuring sensors over a control. The sensors are arranged at the releasing gap for measuring pressure, filling level- and/or the weight of the mass in the container and for measuring the strength of the continuous dough strip. The side conveyor belt and/or the corresponding sidewall are adjustable in its interval to each other. The cutting device consists of ultrasonic cutting unit, a laser beam, a mechanical knife or a water beam. The gap is regulatable in its height and/or width for releasing the dough strip. An independent claim is included for a method of forming a dough strip from dough mass.</p>
