The present invention addresses the problem of providing a method for suppressing the aging of starch without changing any physical properties other than the aging properties of starch, more specifically, without greatly changing the structure of starch. The present invention solves the above problem by providing a method for suppressing the aging of starch characterized by causing a glycosyl trehalose producing enzyme to act on a starch that shows aging properties, and introducing a trehalose structure to a reducing terminal of the starch, thereby lessening the aging properties of the starch than before the introduction of the trehalose structure. |
