<P>PROBLEM TO BE SOLVED: To provide an oil-and-fat composition for solid roux in which shape retention, solubility and favorable palate feeling are excellent, whose oil and fat contain a little amount of trans acid, and which is well released from a mold when producing roux and causes little cracks. <P>SOLUTION: The oil-and-fat composition for solid roux comprises 90-98 mass% of the following component (A) and 2-10 mass% of the following component B. The component (A) comprises mixed oil composed of 50-90 pts.mass of beef tallow or lard, and 10-50 pts.mass of extremely hardened oil of beef tallow or extremely hardened oil of lard. The component B comprises extremely hardened oil of high erucic oilseed rape. The component (A) comprises ester-exchanged oil obtained by subjecting the beef tallow or the lard, and the extremely hardened oil of beef tallow or the extremely hardened oil of lard to ester exchange. <P>COPYRIGHT: (C)2009,JPO&INPIT |
