The present invention relates to a manufacturing method of glutinous barley confectionery, and to glutinous barley confectionery manufactured thereby. According to the present invention, the manufacturing method of glutinous barley confectionery comprises: a raw material preparation step (S100) for preparing ingredients; a measurement step (S200); a first mixing step (S300); a second mixing step (S400); a third mixing step (S500) for completing paste; a first aging step (S600) for aging the paste by using a low-temperature refrigerator; a molding step (S700) for processing the paste aged at low temperatures to the shape of the desired product; a second aging step (S800) for storing the molded paste at room temperature, and aging the same; and a heating step (S900) for completing glutinous barley confectionery by heating the aged paste. Provided in the present invention are the chewy mouthfeel of glutinous barley and novel and various tastes and flavors for users. |
