<P>PROBLEM TO BE SOLVED: To provide a method for preventing heat denaturation caused due to sterilization and denaturation caused due to freezing of albumen, and denaturation caused due to freezing of yolk. <P>SOLUTION: This method comprises adding inulin oligosaccharide to yolk or albumen or boiled egg followed by freezing when producing frozen yolk or albumen or frozen boiled egg. Alternatively, the method comprises performing heat sterilization treatment through adding inulin oligosaccharide to albumen in heat sterilization treatment of albumen.
