PROBLEM TO BE SOLVED: To provide a method for producing instant non-fried noodles that are cooked by frying pan cooking.SOLUTION: By spraying oil on a raw noodle string incorporating propylene glycol alginate, followed by steaming, and hot-air drying, followed by bulking treatment, instant non-fried noodles that have a good unraveling of noodle strings during cooking even in a cooking method of less water use which is called a frying pan cooking, and has a good recovering property as well as eat-texture, can be produced.SELECTED DRAWING: None |
