PROBLEM TO BE SOLVED: To provide heat-treated grain flour capable of producing a grain flour-containing food product excellent in secondary workability and good in texture and mouth.SOLUTION: Provided is heat-treated grain flour obtained by subjecting dry grain flour to wet heat treatment. As the dry grain flour, the one obtained by subjecting the raw material grain flour to wind drying is preferable, and in this case, as the wind drying, the treatment of blowing wind on the raw material grain flour and maintaining the quality temperature 70 to 150°C of the raw material grain flour to 2 s to 60 min is preferable. Further, the wet heat treatment is preferably performed using a production device provided with a transfer passage of transferring the introduced dry grain flour to the exhaust port and a mechanism of introducing saturated water vapor into the transfer passage.SELECTED DRAWING: None |
