FIELD: food industry.SUBSTANCE: group of inventions relates to food industry, in particular to production of coffee flavour soluble granules and coffee flavour substance. Method comprises combining spray-dried coffee flavour with Maillard process flavour and caramel sugar. Obtained fine powder is suspended in a fluidised bed. Method includes spraying with aqueous solution of saccharide binding agent in form of Arabian or xanthan gum. Soluble coffee powder per portion contains a soluble coffee and up to 50 wt% coffee flavour substance. Three-in-one (coffee-sugar-cream) coffee powder contains coffee flavour substance, which contains soluble coffee and up to 50 wt% coffee flavour substance. Food product contains a consumed base of a composition and coffee flavour.EFFECT: group of inventions enables to obtain a product, which has taste, appearance, like that of instant coffee.11 cl, 1 ex |
