A carcass ply (3) is applied around an outer surface (14) of a building drum (10), according to an application diameter (Dl) greater than the fitting diameter (DO) of the tyre (2). An annular anchoring structure (5) defining the fitting diameter (DO) is coaxially engaged around each of the end flaps (3a). An outer sleeve (24) comprising at least one belt structure (7) possibly associated with a tread band (8) is disposed at a coaxially centred position around the carcass sleeve (21) applied onto the building drum (10). Through axial approaching of two halves (10a) forming the building drum (10), the carcass sleeve (21) is shaped into a toroidal configuration to determine application of same against a radially internal surface of the outer sleeve (24).
