PROBLEM TO BE SOLVED: To provide a method of estimating lactic acid buffering capacity of fermented product materials suitable for multi-sample analysis.SOLUTION: A method of estimating lactic acid buffering capacity of a fermented product material involves; producing a standard curve from correlation between data based on an X-ray fluorescence spectrum obtained by performing an X-ray fluorescence analysis on a fermented product material having known lactic acid buffering capacity and the known lactic acid buffering capacity; and applying data based on an X-ray fluorescence spectrum obtained by performing an X-ray fluorescence analysis on a fermented product material having unknown lactic acid buffering capacity to the standard curve to estimate lactic acid buffering capacity. Use of the standard curve eliminates needs for an effort of actually measuring lactic acid buffering capacity of fermented product materials having unknown lactic acid buffering capacity. Use of X-ray fluorescence analysis significantly reduces time required for analysis including pre-processing, which makes the method suitable for multi-sample analysis.SELECTED DRAWING: Figure 1 |
