The present invention addresses the problem of providing a liposome production method capable of reducing facility costs and also capable of quick desolventization, and a liposome production device to be used with the method. The present invention provides a liposome production method including a stirring step for stirring a liquid mixture containing a water phase and an oil phase obtained by dissolving one or more types of lipids in an organic solvent, and an evaporation step for evaporating the organic solvent from the liquid mixture, wherein the evaporation step removes the organic solvent which condensed due to ventilation of a gas at or below the dew point of the solvent.
