PROBLEM TO BE SOLVED: To provide a dextrin fatty acid ester and a cosmetic, having an excellent viscosity recovery property and a low syneresis property.SOLUTION: Provided is a dextrin fatty acid ester which is an ester between dextrin and a fatty acid, in which the dextrin has an average sugar polymerization degree of from 3 and 100, the fatty acid comprises one or more linear saturated fatty acid having a carbon number of from 14 and 18 and one or more branched saturated fatty acid having a carbon number of from 14 to 18, a mole fraction of the linear saturated fatty acid in the fatty acid is from 0.75 to 0.95, and an average degree of substitution by the fatty acid per glucose unit is from 1.5 to 2.0.SELECTED DRAWING: None |
