摘要 PROBLEM TO BE SOLVED: To provide a novel technology capable of reducing baking drop in a baking step, in a production method of baked chocolate confectionery.SOLUTION: There is provided a method for producing baked confectionery by baking an ingredient-containing chocolate dough containing one or two or more kinds of ingredients selected from a rod-like ingredient, a tabular ingredient or a granular ingredient having the maximum grain size of 10 mm or less. In the production method of baked chocolate confectionery, the ingredient-containing chocolate dough contains a 0.001-1.5 pts. wt. ingredient to 1 pts. wt. chocolate, and thereby baking drop in a baking step can be reduced.SELECTED DRAWING: None
