The invention relates a method for the basic or acid transesterification of oils and fats, namely the esters of glycerine with fatty acids, by introduction of lower alcohols, especially methanol, in the fluid starting material. The invention is characterised in that the methanol is introduced in gaseous form in the reaction mixture. The invention also relates to various embodiments of this method.
