<P>PROBLEM TO BE SOLVED: To provide a method for producing buckwheat noodles having flavor and palate feeling which are close to those of buckwheat noodles which have only buckwheat flour as the raw material. <P>SOLUTION: This method for producing the buckwheat noodles comprises using as thickening of buckwheat flour, an alginate aqueous solution of univalent positive ion having smooth and high viscosity, and a fucoidan aqueous solution. In more details, the method comprises chopping seaweeds which are washed and from which dust and dirt are removed, to small pieces or powder, adding water to the product, extracting an alginate aqueous solution of univalent positive ion, and a fucoidan aqueous solution, adding the solutions to buckwheat flour as thickening followed by stirring and kneading, and extending the product followed by cutting into small pieces. <P>COPYRIGHT: (C)2008,JPO&INPIT |
