PROBLEM TO BE SOLVED: To make tasty bread easily using cereal grains and achieving stable finish with the cereal grains at home by making a grain paste appropriate for bread making without using wheat flour or gluten.SOLUTION: The automatic bread making device uses raw cereal grains, controls heating means 26 and a kneading blade 24 as agitation means, makes a grain paste having an optimized shear viscosity from raw cereal grains and water without gelatinization, and uses the grain paste. Accordingly, in bread using grains as cooked materials, raw grains need not be crushed directly into grain power, silent operation and low vibration in making bread can be achieved, the shear viscosity is managed, various processes from kneading of bread materials to baking are performed with the automatic bread making device thoroughly, thereby bread making can be performed while achieving stable swelling and using grains.SELECTED DRAWING: Figure 1 |
