PROBLEM TO BE SOLVED: To provide a method for producing a derivative from a chitin monosaccharide without using an acid or alkali catalyst only with water, further while reducing the production time, and to provide an apparatus therefor.SOLUTION: The method for producing the derivative of the chitin monosaccharide includes reacting a solution of the chitin monosaccharide by subcritical water or supercritical water. The reaction temperature of the chitin monosaccharide in the subcritical water or the supercritical water is regulated so as to be within the range of 100-400°C, and the pressure on the chitin monosaccharide is regulated so as to be within the range of 0.1-40 MPa. |
