The invention refers to the production of sparkling wine from specific grape varieties (assyrtiko, malagouzia, athiri and chardonnay) with organic Kozani saffron for the purpose of creating a new type of wine. The organic Kozani saffron is added during the first fermentation for the production of sparkling wine (Prosecco, Cava, Sekt) or during the second fermentation for the production of fine sparkling wine (Champagne). |
