A method is provided to produce a diacetal economically and effectively in a high purity by a condensation reaction of an aromatic aldehyde and a polyhydric alcohol, which can increase a reaction activity and a yield by adding a surfactant. The method comprises the steps of: mixing at least one aromatic aldehyde, a C5-C6 polyhydric alcohol, an acid catalyst, a hydrophobic organic solvent, and water; injecting 0.05-15pts.wt.(based on 100pts.wt. of the aromatic aldehyde and the polyhydric alcohol) of a surfactant into the mixture; reacting the mixture at 65-100deg.C; neutralizing, filtering, cleansing, and drying. The surfactant is at least one selected from the group consisting of a polyethylene alkyl aryl ether, a polyethylene alkyl ester, a polyethylene alkyl amine, a polyethylene glycol, a polyoxy ethylene aliphatic ester, a sorbitan aliphatic ester, a sodium alkyl aryl sulfate, and etc.
