METHOD FOR PRODUCING PHLORETIN GLYCOSIDE

PROBLEM TO BE SOLVED: To provide a method for inexpensively producing a phloretin glycoside now because only cholecalciferol and ammonium chloride are reported as materials for promoting biosynthesis of melanin.

SOLUTION: The method for producing the phloretin glycoside comprises a first step for converting phlorhizin present in squeezed juice or extract of an immature fruit of an apple or a pear to the slightly water-soluble phloretin by treating the squeezed juice or extract of the immature fruit of the apple or the pear with an enzyme having β-glucosidase activities, a second step for purifying and collecting the phloretin, and a third step for converting the phloretin purified and collected at the second step to the objective phloretin glycoside.
