<p><P>PROBLEM TO BE SOLVED: To provide a method for producing a liquid koji with a highα-amylase content affording unrefined sake with a high content ratio of theα-amylase without using an enzyme preparation comprising theα-amylase blended therein and to provide a method for producing liquors using the liquid koji with the highα-amylase content. <P>SOLUTION: The method for producing the liquid koji with the highα-amylase content is provided.
