This device for detecting phase transition changes in a food sample is provided with: a support stand for supporting a moisture-containing food sample capable of phase transition between solid and liquid; light penetration means for irradiating near-infrared light that includes the absorption peak of water and ice in the food sample supported on the support stand; spectroscopy means for transmitting near-infrared light emitted from the light penetration means through the food sample, reflecting and receiving the near-infrared light, temporally dividing the near-infrared light, and measuring the light intensity; absorbance/ice weight ratio calculating means for calculating the temporal absorbance of water and ice in the food sample, and the ice weight ratio of frozen moisture on the basis of the spectroscopy data of the near-infrared light measured by the spectroscopy means; absorbance differential value calculation means for calculating the differential value of the absorbance of water and ice calculated by the absorbance/ice weight ratio calculating means; calibration curve formation means for forming a calibration curve on the basis of the differential value of absorbance calculated by the absorbance differential value calculation means, and the ice weight ratio of the frozen moisture calculated by the absorbance/ice weight ratio calculating means; and ice weight ratio estimation means for estimating the unknown ice weight ratio from the differential value of absorbance calculated from the absorbance calculated by the absorbance/ice weight ratio calculating means on the basis of the calibration curve formed by the calibration curve formation means. |
