<p>A preparation of Pyrococcus furiosus extracellular α-amylase is disclosed. In one embodiment, this α-amylase has an optimal temperature of 100 °C, a pH optimum of 5.5-6.0, and a half-life at 98 °C of between 12 and 14 hours. In another embodiment, the present invention is a gene construct encoding an extracellular α-amylase with an optimum temperature of 100 °C.</p> |
