PROBLEM TO BE SOLVED: To provide a method of decarburizing stainless steel in a RH-degassing tank in ladle refining of stainless steel, in which air is used instead of N<SB>2</SB>gas for cooling to prevent melt loss of a blowing pipe at oxygen blowing and only the amount of oxygen is increased without increasing the total amount of gas so as to prevent splash-induced occlusion of an exhaust duct, to promote secondary combustion to shorten decarburizing time, and to prevent melt loss of the blowing pipe. SOLUTION: N<SB>2</SB>used as a cooling gas for cooling the oxygen-blowing pipe at production of stainless steel cannot induce secondary combustion as indicated in the formula: CO+O→CO<SB>2</SB>. Thus, air is used as the cooling gas so as to promote secondary combustion by oxygen in the air. The method of decarburizing molten stainless steel in the RH-degassing tank comprises a step of adjusting and increasing the flow rate of the air used for cooling the oxygen-blowing pipe to 10-100 Nm<SP>3</SP>/hr so as to achieve a CO<SB>2</SB>concentration of 10-20% at oxygen blowing from the oxygen-blowing pipe 8.
