HIGHLY FLAVORING DECAFFEINATED TEA BEVERAGE

PROBLEM TO BE SOLVED: To provide a highly flavoring decaffeinated tea beverage that has improved flavor of tea beverage in a highly flavoring tea beverage which is decaffeinated so as to have a caffeine content of 10 ppm or less by masking a heat-deterioration odor generated by heat sterilization at a high temperature in a production process of beverage.SOLUTION: In the production of a decaffeinated tea beverage having a caffeine content of less than 10 ppm,a highly flavoring decaffeinated tea beverage is produced, which has a heat-deterioration odor masked by adding a cis-3-hexene-1-ol or cis-3-hexene-1-ol-containing material to a tea beverage extract subjected to decaffeination treatment and adjusting the cis-3-hexene-1-ol in the tea beverage so as to be contained in an amount of not less than 0.05 ppm to less than 0.2 ppm. Provided is the highly flavoring decaffeinated tea beverage in which a heat-deterioration odor is masked by adjusting the cis-3-hexene-1-ol in the tea beverage so as to be contained in a specific amount and addition of odd flavor as a tea beverage is avoided by virtue of the cis-3-hexene-1-ol.SELECTED DRAWING: None
