A method of making a cream includes making the cream by means of preliminary pulping of black currant berries, combining the ready berry puree with refined sugar powder in a ratio of 1:1, cooling and introducing the mass obtained into whipped cream. Then while conducting the continuous mixing introducing a slightly cooled gelatine solution by a thin spray, pouring the ready cream into moulds and cooling. While making the black currant berry puree, it is supplemented by the biologically active additive "PhytoMax" in an amount of 2.5% of the mass of the refined sugar powder and vitapectine in an amount of 5% of the mass of the refined sugar powder and boiled for (0.6-1.2).102 s.
