PURPOSE: A double boiler is provided to extract a large amount of extract in a short time by using a ceramic emitting a remote infrared ray. CONSTITUTION: A double boiler is manufactured by:a storing container(12) containing plural apertures(12') on the surface for being insert-installed in the inner upper end unit of a heating container(11); a collecting container(13) of a funnel shape being installed in the direct lower direction of the storing container; a connecting pipe(14) for connecting the lower end of the collecting container to a draining aperture(15) on the external of the heating container; a covering body(16) being adhered on the upper end of the heating container for being opened and closed by a hinge(21); a water level detector(22) being attached on the inner side of the heating container; a timer(23) and a buzzer(24) being attached to the outer side of the heating container; plural ceramic balls(31) or ceramic plate being removably attached on the inner wall of the covering body for emitting a remote infrared ray; and vapor discharging aperture(16') being installed on the covering body for being possibly opened and closed. Therefore, the water vapor from the water being heated by a burner(34) heats the material being stored in the storing container with a uniform pressure and temperature for extracting the extract.
