<P>PROBLEM TO BE SOLVED: To provide a conditioning agent for food, containing high-safety acetic acid and/or acetate and being suppressed in the acetic acid odor of acetic acid and/or acetate, and to provide food which contains the conditioning agent for food. <P>SOLUTION: This conditioning agent for food contains acetic acid and/or its salt, and gluconic acid and/or its salt.
