Provided are an oil degradation meter and a method for evaluating oil degradation, which allow a user to set an arbitrary level of degradation of an oil/fat using acidic value (AV) as an indicator, regardless of differing parameters such as the moisture content of foods to be fried, so as to allow the user to know, easily and with reliable repeatability, when to change the oil/fat. According to a setting procedure, the user: sets the acidity value (AV0) of unused oil/fat as 0; measures and records the dielectric constant (D0) of the oil/fat at this time; measures the dielectric constant (D100) of the oil/fat at the time of changing under specific oil/fat usage conditions; and records this dielectric constant (D100) along with the acidity value (AV100) at this time. According to a measurement procedure, the user measures the dielectric constant (Dn) of a sample oil/fat, and calculates the acidity value (AVn) of said sample oil/fat on the basis of the dielectric constants (D0, D100) and the acidity value (AV100) recorded during the setting procedure, using the formula AVn = AV100 x ((Dn – D0) / (D100 – D0)). |
