摘要

PROBLEM TO BE SOLVED: To provide a paeoniflorin-containing extract jelly preparation which is excellent in portability, has an excellent jelly strength, and stabilizes the paeoniflorin.

SOLUTION: This lightweight, non-bulky, conveniently portable paeoniflorin-containing extract jelly preparation is characterized by using pectin as a jelly substrate and adjusting the content of a divalent metal ion to a metal-converted content of 0.015 to 0.05 pt.wt. per 1 pt.wt. of the pectin.
