<p><P>PROBLEM TO BE SOLVED: To obtain a fermented beverage, especially a fermented beverage with beer taste, of high relish that is rich in isoamyl acetate. <P>SOLUTION: In the method for producing a fermented beverage by subjecting an aqueous mixed liquid composed of water and a raw material containing a glucide component and optionally hop to alcoholic fermentation, a fermented beverage exhibiting excellent flavor is produced by adding a decomposition product of corn protein as a nitrogen source to the raw material before or during the alcoholic fermentation. <P>COPYRIGHT: (C)2006,JPO&NCIPI</p> |
