PROBLEM TO BE SOLVED: To improve the quality of an oil or fat by preventing a large quantity of water discharge, enabling a gum substance to aggregate surely and removal efficiency of the gum substance to be improved, and diminishing water content remaining in the oil or fat as far as possible. SOLUTION: In a purification method of an oil or fat for eliminating a gum substance from an unpurified oil containing the gum substance containing a phospholipid as the main component, water in an amount of 10 wt.% or lower, preferably 0.1-5.0 wt.%, more preferably 0.25-1.0 wt.%, and a calcium carbonate powder in an amount of 1-20 wt.%, preferably 5-15 wt.%, more preferably 10±2 wt.%, are added to the unpurified oil. This unpurified oil containing water and a calcium carbonate powder is agitated, then left at rest, and filtered to separate agglomerate. COPYRIGHT: (C)2009,JPO&INPIT
