PROBLEM TO BE SOLVED: To obtain a novel microorganism in Acinetobacter that can convert high molecular weight of konjak mannan to low molecular weight of konjak mannan and is amylase-active, xylanase-active and protease-active. SOLUTION: This novel microorganism has activity of converting high molecular weight of konjak mannan to low molecular weight of konjak mannan to lower the viscosity and liquefy the mannan. This microorganism can hydrolyze gum guaiac or Locust bean gum mainly containing other mannans than konjak mannan in addition of the konjak mannan, in an extent that manno- oligosaccharides for example, mannose, mannobiose, mannotriose or the like are not formed. This microorganism is deposited as FERN P-166331.
