<P>PROBLEM TO BE SOLVED: To provide a flavor deterioration-suppressing method for lemon flavor preventing cyclization and oxidation reaction of lemon flavor, specifically citral comprising a main flavor component of the lemon flavor, and generation of deterioration smell substance such as paracymene or dimethylstyrene as a reaction product so as to long maintain fresh lemon flavor in the beverage, suppress generation of the deterioration smell and exert no influence on the quality of the beverage: and to provide a beverage produced by the method. <P>SOLUTION: The flavor deterioration-suppressing method for lemon flavor in a beverage comprises adding sodium ascorbate to a lemon flavor-containing beverage to regulate pH of the beverage. The lemon flavor-containing beverage is obtained by suppressing lemon flavor deterioration by the flavor deterioration-suppressing method.
