PROBLEM TO BE SOLVED: To provide methods of producing pyruvic acid or a salt thereof simply and efficiently.SOLUTION: A production method of pyruvic acid or a salt thereof comprises the following steps (1) and (2): (1) culturing halobacteria belonging to Halomonas in a liquid medium containing an organic carbon source and an inorganic salt while controlling the concentration of the bacterial cells in the culture solution so as to maintain the OD 600 value at less than 30; and (2) recovering pyruvic acid or a salt thereof from the culture solution obtained by the step (1).SELECTED DRAWING: None
