<P>PROBLEM TO BE SOLVED: To provide a method for efficiently producing fatty acids having a low content of trans-unsaturated fatty acids in the constituting fatty acids and good external appearance with reduced coloring by hydrolyzing fats and oils. <P>SOLUTION: The method for producing fatty acids by hydrolyzing fats and oils comprises partially hydrolyzing fats and oils with the use of an immobilized enzyme obtained by immobilizing an enzyme on a carrier by enzymolysis, and thereafter hydrolyzing the partial hydrolyzate by high-temperature, high-pressure decomposition. <P>COPYRIGHT: (C)2007,JPO&INPIT |
