<P>PROBLEM TO BE SOLVED: To provide a freeze-dried block soybean paste excellent in taste, at a low drying cost, with good productivity, neither increasing hydration amount, which causes increase of drying cost and damage of taste, nor adding any additive, which causes decrease of taste, and performing no complicated operation such as repacking a cooled and solidified soybean paste in another specific container on the way of the production step. <P>SOLUTION: The method for producing the freeze-dried block soybean paste comprises filling a water-added and mixed soybean paste in a molded container 10, which has a vertically reversed capped pyramid-like shape having a narrow bottom of the lower part and a wide opening of the upper part and is formed plural grooves 11 from the the bottom to the upper part on the inside of the side wall, cooling the obtained to cool and solidify the water-added soybean paste, and then freeze-drying the solidified. <P>COPYRIGHT: (C)2007,JPO&INPIT |
